How should steamer heating be specified for commercial heating elements?
Specify the element by peak steam duty, not the catalog rating. Establish water volume, feedwater temperature, continuous steam output and door-opening frequency first, then derive wattage, surface load, sheath diameter and material; keep surface load low to limit scale and local overheating. For installation, confirm low-water protection, ingress protection, terminal clearance and steam flow path, and use an adjustable thermostat with adequate differential. Accept the unit on steam-recovery time after repeated door openings rather than no-load warm-up, and ask the supplier for duty curves if needed.
