Why is the product-holding system important on a meat slicer?
The product-holding system governs whether meat stays restrained throughout the cut. Too little pressure lets frozen or firm items slip, producing erratic slice thickness; too much crushes soft cooked meats and hams, deforming the face. Ask how widely pressure can be adjusted, what contacts the product, and which sizes fit. Then run samples of differing hardness and temperature, watching thickness spread and surface marking across a continuous slice run. Clamping alone proves little—batch consistency is the real measure. Document thickness deviation, deformation and temperature rise on the machine's setup and quarterly service card, and re-verify before switching products or specs.
