Where the temperature probe sits matters more than any brochure claim. Check whether the displayed reading tracks the actual food temperature inside the wok by logging the same fixed measurement point when the pan is empty, right after batch loading, and once stir-frying stabilises; repeatable deviation is the real signal. A precise probe does not guarantee even heat across the wok, so a unit can pass a single test yet drift during a busy service. Before shipping, have the supplier state the probe mounting position and acceptance method in the contract; on arrival, verify pan wall and centre with an infrared gun or needle probe, and file ingredient conditions, machine settings and results for later stir-fry fault tracing.
