Blade diameter follows the largest product cross-section and the target slice thickness: the cut width must clear hams and cooked meats, while thin slices demand a stable edge and matched speed. For pressed hams, also check the pressure stroke and feed length to prevent jams or uncut ends. A larger blade adds inertia and footprint without guaranteeing value. Run your own product continuously and watch slice integrity, edge tearing and feed smoothness before fixing the size. At handover, check edge sharpness and mounting concentricity separately, weigh trim loss, and only then release the bulk order.
