Don't accept "removable pan" at face value. Ask how the wok body actually releases, then have a line cook strip, wash and refit it during a simulated rush, timing each step and noting whether the pan needs recalibration or the stir-frying path shifts afterwards. Inspect the pan base, paddle roots and temperature sensor area for residue once clean. If refitting demands recalibration or spoils toss consistency, changeover downtime climbs fast. Sign off only when three consecutive strip-wash-refit cycles stay stable and the first dish after refitting meets spec; attach that test to the order.
