How should independent burner control be evaluated when buying a rotating clay-pot cooker?
Don't just count the knobs on the panel when judging independent burner control. Run several clay pots side by side with different settings, one on high for sauce reduction, one low for slow simmering, one holding warm, and watch whether the flames and base heat hold steady without dragging each other. Ask the maker to state each position's flame range, gas pressure and nozzle size for searing, reducing and holding, then agree to verify with pot-base temperature readings taken at several points. If turning one burner changes another, shared regulation is costing you parallel output and belongs in the contract.
