How should fryer cold zone be specified for commercial heating elements?
The fryer cold zone should be specified from actual duty: first set its height and position by oil capacity, element layout and the debris settling path, so carbonized residue collects at the cold zone bottom instead of staying on the heated surface. Then combine sheath diameter, material, surface load and protection rating to calculate the hot length and power distribution, ensuring the cold zone does not carry the main heating duty. During installation, check the gap between element and tank bottom, the fixing method and thermal expansion allowance. For temperature control, set reasonable oil-temperature limits and over-temperature protection. At acceptance, drop simulated crumbs to observe settling, and log oil-temperature swing, power and insulation resistance. Any resizing requires fresh mounting and thermal calculations.
