Time the full cleaning cycle with a stopwatch: power off, hopper removal, auger extraction, blade and plate teardown, washing, reassembly, then a dry run. For kitchens switching batches often, ten to fifteen minutes per changeover is a sensible ceiling; anything slower eats into throughput. Have an operator perform the sequence during evaluation, noting how many tools are needed and where it snags. Machines demanding special tools or three or more removal steps are best rejected. Lock that measured figure into the contract and require delivery samples to match it, so future servicing has a concrete benchmark.
