How should slice-thickness deviation be measured accurately?
To capture true slice-thickness deviation, lock down the gauge and the measurement points first: use a 0.01 mm caliper or thickness gauge at the centre and 10 mm from each edge, and avoid compressing soft products. Once the machine has warmed up and runs steadily, take 10–20 consecutive slices at the set thickness, logging the target, each slice's average and the worst single-point reading. A workable tolerance is ±5% of the setting or ±0.5 mm, whichever is larger. Repeat three times with the same raw material and blade speed, then keep the samples and data with the machine file as the reference for blade-wear checks and the annual review.
