How should lifting speed be evaluated when buying a lifting noodle cooker?
Don't judge lifting speed by an empty basket. Fix the test conditions first: how deep the water covers the basket, how full it is with noodles, and the drain time, then run the up, down and final deceleration phases while watching for hot-water splash, basket sway and proper draining. The fastest setting often slows service because excess shaking and poor drainage cost more time than they save. During factory trials, test three speeds with the same noodle batch, choose the one with the best overall rhythm and write it into the contract; post that speed and drain timing near the holding tank so every operator keeps noodle texture consistent.
