What parameters matter when slicing beef rolls?
Roll diameter and core temperature come first, since they dictate clamping and whether feeding slips. Then match target slice thickness with feed speed, and verify blade sharpness and material. Changeovers between roll sizes are where clamping and feed stability usually fail. Run a continuous trial on the actual commercial spec and watch for torn, stringy, or progressively thicker slices, logging blade and product temperatures as you go. Accept the machine on that same production run, with net hourly output measured.
