How should installation interfaces be evaluated when buying an automatic cooking machine?

Match the machine to the site before anything else. Verify supply voltage and phases, gas type, calorific value and pipe diameter, water pressure and drain drop, hood and duct connections, plus control protocol and spare cable routes. Using the maker's installation drawing, measure actual offsets with a tape, then power, gas and water the unit and dry-run and batch-cook to see whether the wok tilt, batch loading or tossing trajectory fouls any line. Once dimensions, positions and elevations are signed off, have them frozen on the nameplate or as-built drawing and rechecked on arrival to prevent rework.
