How should lifting travel be evaluated when buying a lifting noodle cooker?

Set lifting travel from three fixed points: how deep the basket must sit below the waterline, how far it clears the surface when raised, and where the bowl or tray rests. Have the supplier jog the lift on site and measure basket-bottom to water at the low stop, basket-bottom to counter at the high stop, then time one full cycle. Too little travel leaves noodles above water and undercooked; too much slows the pace, raises the frame and lets more steam escape. For all-day service, test once at lunch and once at dinner peak, note motor and limit-switch response, and post the stop positions and cycle time beside the nameplate for future chain, limit or basket changes.
