How should basket mesh size be evaluated when buying a lifting noodle cooker?
Judge mesh by how it performs in your actual cooking routine, not by the supplier's advertised figure. Hole size governs water flow through the lifting basket, support for thin noodles, and how easily debris rinses away. Before delivery, boil thin, wide, and alkaline noodles in separate baskets and log how many strands escape, whether they stick, and the rinse time each needs. Finer mesh does not guarantee better circulation; during a busy service it can clog with starch and cause inconsistency. Attach those three test results, plus water level and lift timing, to the noodle boiler's acceptance sheet.
