To judge anti-sticking performance, first check whether batch loading, water temperature and flow stay steady through peak hours, then examine how the lifting basket's mesh, spacing and lift rhythm keep strands separated and agitated. Ask the supplier to run the same noodle type and portion size side by side with different baskets and lift cycles, watching clumping and overcooking after the noodles rest a few minutes post-lift. Never treat a longer boil as an anti-stick fix, since it usually worsens clumping. For acceptance, cook ten or more consecutive batches, log the clumping rate, and put it on the machine's operating card.
