Have the maker run a fully loaded turn at your heaviest batch for a full revolution plus repeated hard stops, logging each lap time and deviation. Chasing the fastest spin usually costs positioning accuracy and safety; smooth idle motion does not guarantee stability through a busy lunch rush. At acceptance, cook one batch of raw rice on site and check whether loading, simmering and pot removal feel natural.
