How should exhaust connection be evaluated when buying an automatic cooking machine?
Start with the wok diameter and tossing trajectory to size the hood footprint, then measure the clear gap between the machine edge and the wall. Check whether the flange bolt pattern, centre height and discharge direction line up with the ductwork on site. Never size airflow from cabinet dimensions alone: run a full batch of high-fume dishes such as dry-fried or flash-fried items and watch for smoke escaping at the loading door or discharge chute. Log duct velocity and negative pressure at peak service; a clear drop means you need more extraction or makeup air. Keep flange hole spacing and flexible-duct length on file for the next relocation.
