Base the count on peak-hour pot throughput divided by the true cycle from loading rice to lid removal, then discount it for operator traffic: if reaching, saucing and garnishing overlap the next position, effective capacity drops. Run a full-load trial at your real order pace and log how many positions actually run together, turn intervals and idle gaps. More positions do not equal more output—if rotation speed, zoned burners and temperature control lag, extra slots merely occupy counter space. During acceptance, fire three consecutive full batches and confirm simultaneous output matches the rated position count.
